Kevin Brauch, from Iron Chef America, emceed again this year as competitors created dishes from regional sustainable foods of New England.
The competitors were:
Elizabeth Chilton ’91 MA, ’96 PhD
Professor Chilton is director of the Center for Heritage and Society in the College of Social and Behavioral Sciences and past chair of the Anthropology Department. She is an archaeologist who specializes in ancient food systems in New England, particularly maize agriculture, as well as in the origins of agriculture, origins of social complexity, cultural resource management and the native peoples of northeastern North America. She loves seafood, vegetables and flavorful spices.
Eric Decker ’89 PhD
Professor Decker joined the UMass faculty in 1993 and is currently the director of the Industrial Strategic Research Alliance program and department head of the Food Science Department in the College of Natural Sciences. His work includes research on antioxidants, the effect of processing on bioactive lipids and strategies to inhibit lipid oxidation. Professor Decker has worked on National Academy of Science nutrition committees and consulted with major food companies on creating a higher-quality food supply. He loves Italian cuisine, with its simple, fresh ingredients cooked to perfection.
Pierre Rouzier, MD
Dr. Pierre Rouzier is a primary care physician who specializes in sports medicine with University Health Services. He is also head team physician for UMass Athletics and can be found on the sidelines of most football, basketball, hockey and lacrosse games, diagnosing and treating athletic injuries. He has authored two books, The Sports Medicine Patient Advisor and Henry gets Moving, which is a children’s book aimed at combating childhood obesity. Dr. Rouzier counsels his patients to eat well and to exercise often so they can eat heartily and stay healthy. He enjoys spicy fare—the hotter the better.
Iron Chef 2013 Menu:
Iron Chef 2013 is a celebration of the regional and sustainable foods of New England. The chefs will be working with locally grown fruits and vegetables, fish from regional waters, and choices such as maple syrup and cranberries to give the menus a regional flavor. Appetizers and a signature drink will be concocted and served, and samples of the entrees created in the competition will be shared freely with the audience. All are welcome to watch, cheer on their favorite chef teams and sample the healthy bounty.
